Note: Substitute silverbeet with kale or rainbow chard. Spicy dukkah & turmeric mixes are available from selected food stores Cover with a lid and turn the heat down to medium low. Once the silver beet starts to wilt, take it off the heat. Fry the bread until golden and crispy.

Instructions to make Sautéed Silverbeet with Chickpeas:
  1. Saute the onions in some olive oil until they are translucent. This should take about 4-5mins. Next add the mashed garlic, chilli flakes, cumin and stir-fry for about a minute
  2. Add the chopped silverbeet, some salt and stir to combine all the ingredients in the pan
  3. Cover with a lid and allow the leaves to wilt. This shouldn't take too long! Once it has wilted, add the can of chickpeas
  4. When the silverbeet  is cooking, you can fry the paneer/tofu/bread in some olive oil till it has crisped up. Once the chickpeas has warmed through in the pan, add the paneer or tofu or fried brown/flat bread. Sprinkle the paprika, add the lemon juice and mix well to combine
  5. Serve!

Heat the silver beet again and add the chickpeas. Silverbeet is very cheap at the moment here in New Zealand. I love how packed it is with NUTRIENTS!!!! Silverbeet will add fibre, vitamin C, vitamin E, vitamin A, folate and other nutrients to your diet, but an even better reason to eat silver beet is for the lutein it contains. Drizzle the lemon juice over the mixture and season with salt and pepper, to taste.
