This traditional Shukto recipe is loved by the people of all age groups. Shukto (Bengali: শুক্তো) is a popular vegetable dish in Bengali cuisine usually served with rice in the West Bengal state of India and in the neighbouring country Bangladesh.

The ingredients needed to make Shukto:
  1. Prepare 1 cup raddish, diced
  2. Take 1 cup green plantain, diced
  3. Make ready 1 cup green papaya, diced
  4. Prepare 7-8 broad beans, chopped into half
  5. Prepare 1 cup yam, diced
  6. Make ready 1 small potato, diced
  7. Take 1/2 cup bitter gourd, sliced

  14. Get 1/2 tsp turmeric powder
  15. Make ready 2 tbsp mustard paste / kasundi
  16. Take 1/2 cup milk
  17. Prepare 1 tsp ghee
  18. Make ready 1/2 tsp sugar (opttional)

Pritha explains, "Shukto is not really the name of a single dish. It is essentially a style and method of cooking a starter which is a jewel in the crown of Bengali cuisine. Shukto which people from opar bangla or Bangladesh call shuktoni is actually the result of Portuguese influence from colonization in the pre British era when the use of milk in a savory vegetable dish was tried. The fried lentil dumplings or bori is another delightful part of Shukto which adds a nice bite to the dish.

Steps to make Shukto:
  1. Heat 1 tbsp. oil in a pan and fry the bori till golden brown in colour. Drain and keep aside. In the same oil fry the sliced bitter gourd till light golden brown and keep aside.
  2. Heat the remaining of the oil and temper with the dry red chilli, bay leaves and the panch phoron.
  3. After it stops spluttering, add the chopped veggies and saute on low flame for 5-7 minutes till light brown. Add 11/2 cups water, fried bori, salt and turmeric powder.
  4. Cover and cook on low flame till the veggies turns soft and the gravy is slightly reduced. Now add the milk, ghee, sugar and mustard paste. Simmer for 2-3 minutes and serve with steamed rice.
