Undhiyu is a one pot vegetable casserole dish that is the hallmark of Gujarati vegetarian cuisine. Generally preparing undhiyu takes a lot of time and needs patience.

The ingredients needed to make Undhiyu:
  1. Prepare Muthias
  2. Get 3/4 cup atta (whole wheat flour)

  15. Take as needed oil for deep fry
  16. Make ready Masala for the stuffing
  17. Prepare 1/2 tsp pepper powder or to taste
  18. Prepare 1 tbsp lemon juice
  19. Get 1 cup coriander leaves, chopped
  20. Get 1/2 cup fresh coconut, grated
  21. Make ready 3 tbsp roasted peanuts
  22. Take 2 tbsp roasted sesame seeds
  23. Get 10-15 roasted cashewnuts
  24. Take 1 tsp ginger. grated
  25. Prepare 1 fresh chilli, chopped
  26. Take to taste salt
  27. Take 1/2 tsp. turmeric powder
  28. Get 1 tsp roasted coriander-cumin powder
  29. Prepare 1 tsp red chilli powder
  30. Get Undhiyu Vegetables
  31. Make ready 1 potato, cubed
  32. Make ready 1 green plantain, sliced
  33. Take 1 cup yam, cubed
  34. Make ready 1 cup sweet potato, cubed
  35. Prepare 6-7 eggplants, slit
  36. Take 1/2 cup green peas
  37. Prepare 1 cup broad beans (Sem ki Phalli), cut into half and separated
  38. Make ready As needed oil for deep fry
  39. Prepare Tempering
  40. Take 3-4 tbsp oil
  41. Take 1/2 tsp cumin seeds
  42. Get 1/2 tsp carom seeds (ajwain)
  43. Take 1 cup water mixed
  44. Get 1/2 tsp turmeric powder
  45. Make ready to taste salt
  46. Prepare 1 tbsp ghee (optional)

This dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above. Surti undhiyu recipe - a traditional Gujarati style of making mixed vegetable curry. The gravy has nutty taste because it is made from peanuts, sesame seeds and coconut. Traditionally it is made in clay pot aka 'Matki' or 'Matlu'.

Instructions to make Undhiyu:
  1. To make the muthias - Mix together atta, besan and all the dry powders. Add the oil and combine well. Then add the cumin seeds, chopped methi leaves, ginger and fresh chilies. knead into a stiff dough with required quantity of water. Keep aside for 10 minutes.
  2. Form oval shape small balls out of the dough. Heat oil and deep fry them few at a time till light golden brown in colour. Drain on a kitchen towel and keep aside.
  3. Stuffing - Powder the cashew nuts, sesame seeds and peanuts into a coarse powder. Combine with all the other ingredients and keep aside.
  4. Preparation - Heat oil and deep fry the yam, green plantain, potatoes and sweet potatoes in batches. Drain on a kitchen towel and keep aside.
  5. Stuff the eggplants with the prepared masala and keep aside. Now combine the rest of the masala with the vegetables.
  6. Heat oil in a pressure cooker and temper with ajwain, cumin seeds. After it stops spluttering, add the broad beans and green peas. Saute for a few seconds.
  7. Add the rest of the veggies and top it up with the fried muthias. Add the water mixed with turmeric powder and salt to taste. Pressure cook for 2 whistles.
  8. Transfer it to a separate pan and add more water if gravy consistency is required. Simmer for 2-3 minutes on low flame. Drizzle with some ghee and serve with poori, paratha or just plain chapatti.

The masala and vegetables are added in the matki. It is sealed properly and then placed upside down in the fire pit. Undhiyu, a Gujarati delicacy made with lots of vegetables coated with lots of spices, fresh coconut, sesame seeds, peanuts, cilantro, garlic, ginger and oil, cooked into an Instant Pot. This is an ultimate vegan and gluten-free dish! Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Surat, India.
