  2. Prepare 1 cup water

Khaman is a great snacks as it provides protein, fiber and many other nutrition. The best thing is that there is no compromise for the ingredients as traditional recipe is made from whole Chana Dal and the instant recipe is made from Chana Dal Flour or Besan. Take all ingredients (except eno) for the khaman in a bowl and mix them. Add water gradually to make a smooth batter of pouring consistency with no lumps present.

Instructions to make Nylon khaman:
  1. In a mixing bowl mix all indgridients except eno and rest for 10 mins.
  2. Add eno and steam for 15 to 20 mins.
  3. When khaman is done Let it come to room temperature then temper.(tadka)
  4. To make tadka heat oil,add rai when it crackles add green chillies.
  5. Then add white sesame seeds and water.
  6. Add sugar and curry leaves.
  7. Let it boil till water reduces to half then pour this tadka over khaman pieces.
  8. Serve with coriander leaves and grated fresh coconut.

Khaman is soft, spongy and has a melt in the mouth texture, which is why it is known as nylon khaman. Dhokla can be spongy as well but is a tad bit denser than khaman. Of the two, khaman is more commonly sold in the market and is most often referred to as Dhokla, which, of course, is the wrong name for the dish. Coming to Nylon Khaman, it is again a Gujarati delicacy which is popular not only in Gujarat, but has already crossed India's boundries. Generally, in Maharashtra, Khaman and Dhokla are synonyms.
