Undhiyu is one of the most favored of current trending foods on earth. It’s enjoyed by millions every day. It is easy, it’s quick, it tastes delicious. Undhiyu is something which I’ve loved my entire life. They are nice and they look fantastic.
Undhiyu, a traditional Gujarati curry prepared with many fresh vegetables and dhokli muthiya, is a must have item on festivals like Uttarayan (kite flying festival), Diwali, etc. and special occasions like marriage parties. The vegetable are cooked together with buttermilk, coconut and spice powders and enjoyed hot with rice.

The ingredients needed to make Undhiyu:
Prepare Muthias
Take 3/4 cup atta (whole wheat flour)
Make ready 3 tbsp besan (gram flour)
Prepare 1 cup methi (fenugreek) leaves, chopped

Take 1-2 fresh chilies, chopped

Get as needed oil for deep fry
Prepare Masala for the stuffing
Make ready 1/2 tsp pepper powder or to taste
Take 1 tbsp lemon juice
Prepare 1 cup coriander leaves, chopped
Take 1/2 cup fresh coconut, grated
Prepare 3 tbsp roasted peanuts
Take 2 tbsp roasted sesame seeds
Make ready 10-15 roasted cashewnuts
Prepare 1 tsp ginger. grated
Take 1 fresh chilli, chopped
Prepare to taste salt
Take 1/2 tsp. turmeric powder
Make ready 1 tsp roasted coriander-cumin powder
Make ready 1 tsp red chilli powder
Get Undhiyu Vegetables
Take 1 potato, cubed
Make ready 1 green plantain, sliced
Get 1 cup yam, cubed
Make ready 1 cup sweet potato, cubed
Take 6-7 eggplants, slit
Get 1/2 cup green peas
Get 1 cup broad beans (Sem ki Phalli), cut into half and separated
Prepare As needed oil for deep fry
Prepare Tempering
Take 3-4 tbsp oil
Get 1/2 tsp cumin seeds
Get 1/2 tsp carom seeds (ajwain)
Get 1 cup water mixed
Take 1/2 tsp turmeric powder
Prepare to taste salt
Prepare 1 tbsp ghee (optional)
This dish is traditionally cooked upside down underground in earthen pots, termed "matlu", which are fired from above. Undhiyu, a Gujarati delicacy made with lots of vegetables coated with lots of spices, fresh coconut, sesame seeds, peanuts, cilantro, garlic, ginger and oil, cooked into an Instant Pot. This is an ultimate vegan and gluten-free dish! Undhiyu is a Gujarati mixed vegetable dish that is a regional specialty of Surat, India.
Instructions to make Undhiyu:
To make the muthias - Mix together atta, besan and all the dry powders. Add the oil and combine well. Then add the cumin seeds, chopped methi leaves, ginger and fresh chilies. knead into a stiff dough with required quantity of water. Keep aside for 10 minutes.
Form oval shape small balls out of the dough. Heat oil and deep fry them few at a time till light golden brown in colour. Drain on a kitchen towel and keep aside.
Stuffing - Powder the cashew nuts, sesame seeds and peanuts into a coarse powder. Combine with all the other ingredients and keep aside.
Preparation - Heat oil and deep fry the yam, green plantain, potatoes and sweet potatoes in batches. Drain on a kitchen towel and keep aside.
Stuff the eggplants with the prepared masala and keep aside. Now combine the rest of the masala with the vegetables.
Heat oil in a pressure cooker and temper with ajwain, cumin seeds. After it stops spluttering, add the broad beans and green peas. Saute for a few seconds.
Add the rest of the veggies and top it up with the fried muthias. Add the water mixed with turmeric powder and salt to taste. Pressure cook for 2 whistles.
Transfer it to a separate pan and add more water if gravy consistency is required. Simmer for 2-3 minutes on low flame. Drizzle with some ghee and serve with poori, paratha or just plain chapatti.
Surti undhiyu recipe - a traditional Gujarati style of making mixed vegetable curry. The gravy has nutty taste because it is made from peanuts, sesame seeds and coconut. Traditionally it is made in clay pot aka 'Matki' or 'Matlu'. The masala and vegetables are added in the matki. It is sealed properly and then placed upside down in the fire pit.
