The ingredients needed to make Sambar Recipe:
  1. Prepare For Sambar
  2. Get 1 cup Toor Dal/ Thuvaram Paruppu
  3. Take 2 Tbsp Sambar powder
  4. Take 1 tbsp chilli powder
  5. Prepare Tamarind juice (lemon size tamarind soaked in water)
  6. Prepare 2 Tomataoes
  7. Take 5-6 shallots
  8. Take Vegetables (Brinjal, Drumstick, carrot, pumpkin, Broad beans)
  9. Prepare to taste Salt
  10. Make ready Oil
  11. Take For tempering
  12. Get 1/4 tsp mustard seeds
  13. Get 1/4 tsp Fenugreek seeds
  14. Take 2 dry red chilies
  15. Prepare 1/4 tsp turmeric powder
  16. Prepare Pinch asafoetida
  17. Take leaves Curry
  18. Take leaves coriander

Steps to make Sambar Recipe:
  1. Cook the Toor dal with some water for 4-5 whistles until the dal is fully cooked and turns mushy. Keep this aside.
  2. Heat a pan with oil and add mustard seeds, fenugreek seeds, red chilies, turmeric powder, a pinch of asafoetida and curry leaves to temper. Then add shallots and mix it well. Once the shallots turns light brown, add all vegetables.
  3. Then add tamarind juice; followed by sambar powder and chilli powder. Add water as per your requirement along with required salt then allow it to cook. Cover and cook vegetables for 10 minutes.
  4. Once the vegetables are cooked, then add cooked thoor dal and garnish with chopped coriander leaves and let it cook for few minutes. (I poured cooked vegies into thoor dal but you can also add thoor dal into vegies)
  5. Then turn off the gas and ready to serve.

There are many varieties of sambar that are prepared using different vegetables and spices, and each one of it has a unique taste and flavor. The one I relish the most is the mullangi sambar (radish sambar) and tiffin sambar. Below I have shared a simple version of vegetable sambar that I make a lot. Otherwise, cook separately gives the best result in taste. Additionally, you can add store-bought sambar powder in the recipe but freshly prepared sambar paste gives more richness and tasty flavor in the sambar recipe.
