I mix potato with drumstick to make chorchori, you can add any other vegetables like ivy gourd, Indian broad beans. you can mix all four vegetables and make chorchori that will be more delicious. any ways I made it with only drumstick and potato. Here is yet another traditional Bengali homemade style drumstick chorchori / curry cooked with potatoes. Mustard paste is added to the end product. Poppy seeds paste and fresh coconut paste too can be added to enhance the flavour.

  1. Cut drumsticks into 1 1/2 inch sticks and boil just 1 pressure in little salted water.Release steam.Steam other vegetables also except brinjal.Care should be taken that they are not overcooked.By steaming we can avoid deep frying which needs more oil.
  2. Heat mustard oil in a wok and fry the cubed brinjals and set aside.Fry the lentil dumplings (urad dal vadi) and set aside.Add little more oil and sprinkle paanch phoron.When they splutter add the steamed vegetables and drumsticks.
  3. Sprinkle turmeric,red chilli powder,salt and sugar to taste and the vegetable stock.If needed some more water may be added.It is a semi dry curry.When nearly done add mustard paste with green chilli and toss.Sprinkle 1 tsp mustard oil and chopped coriander leaves and toss.Serve with hot rice.
