Falafel, or ta'ameya as we call it in Egypt, is an all-time favorite street food. In most parts of the Middle East, falafel is made with ground chickpeas. However, in Egypt, we make it with dried fava beans.

Falafel or Taamia is one of the most well liked of recent trending foods in the world. It’s easy, it’s fast, it tastes yummy. It’s enjoyed by millions daily. They are nice and they look wonderful. Falafel or Taamia is something which I’ve loved my whole life.

  1. Get 4 cups dried fava beans, split, dried and skinless

Authentic Egyptian falafels (or more accurately ta'amia) are made with split fava beans instead of chickpeas.   2. Put the dry fava bean in a food processor along with salt, pepper, cumin, coriander, baking powder and chili pepper, and mix them well until they form a smooth paste. Set aside to rest for 30mn.
  3. Add to the fava paste the onion, scallions, garlic, parsley and cilantro; mix well using your hands.
  4. Form spoonfuls of the falafel mixture into balls and flatten slightly into patties. Keep the patties aside to rest for around 15 mn.
  5. For the tahini sauce: in a bowl first combine garlic, tahini, and salt. Then add olive oil, then lemon juice. If it is too thick, you can adjust consistency by adding desired amount of warm water. Chill.
  6. Heat enough oil in pan to deep fry the falafel patties. Make sure to fry them on both sides. When they become brown on both sides, remove and let them drain on paper towels. Serve hot with the tahini sauce.
  7. May be served with pita bread and slices of tomatoes.
