The ingredients needed to make Undhiyu:
  1. Get 1 tbsp dry peas
  2. Prepare 1 tbs dry dal (broad beans)
  3. Prepare 1 tbsp dry kala chana(chickpeas)
  4. Prepare 1 tbsp dry lobia
  5. Get 1 tbsp dry red dal
  6. Get 2 tsp ginger garlic and green chillies (crushed)
  7. Take to taste Salt

  9. Get 1/2 tsp turmeric powder
  10. Take 1 tsp Garam masala
  11. Prepare 2 Raw Bananas
  12. Prepare 2 medium size potatoes
  13. Make ready 1 Bowl Muthiya
  14. Make ready 1 tsp Red chilli powder
  15. Get 1 medium size Brinjal
  16. Prepare 1 yum
  17. Make ready To make Muthiya
  18. Get 1 Bowl Besan(Gram flour)
  19. Take 1/2 Bowl Fenugreek leaves
  20. Make ready 1 tsp ginger garlic (crushed)
  21. Prepare to taste Salt
  22. Prepare 1/2 tsp Turmeric powder
  23. Make ready 1 tsp Red chilli powder
  24. Take as needed Oil to fry

The gravy has nutty taste because it is made from peanuts, sesame seeds and coconut. Traditionally it is made in clay pot aka 'Matki' or 'Matlu'. The masala and vegetables are added in the matki. It is sealed properly and then placed upside down in the fire pit.

Instructions to make Undhiyu:
  1. To make Muthiya, mix all Muthiya ingredients together. Make a hard dough. Take a small portion and give shape like Muthiya and fry on medium-low flame. Keep it ready.
  2. Soak all the dry ingredients for overnight or minimum 8 hours. Chop all vegetables into big pieces.
  3. Take a heavy bottom cooker. Add oil, crushed ginger garlic and green chillies and asfoitida. Saute for some time. Add red chilli powder turmeric powder and Garam masala
  4. Now add all soaked grams. Add vegetables.
  5. Add fried Muthiya. Salt and half glass water. Close the cooker and give 5-7 whistles. Let it cool. Open and mix it softly.
  6. Serve with Roti or Puri or Paratha
