Steps to make Matka Kheer:
  1. Boil milk add soaked rice and elaichi in it.
  2. Keep tawa under your pot so kheer wont stick to the bottom.
  3. Don’t cover the lid. Let it cook on medium flame. The more you cook the more you get creamish kheer colour.
  4. Cook for more 15-20 minutes.
  5. Remove from heat and add kewra essence. Cover the lid now…
  6. It should neither too liquidy nor to thick. It will become thick after cooling down.
  7. Set in bowls and sprinkle soaked chopped almonds and pistachios.
  8. Refrigerate and serve chilled.
  9. Let it cook for atleast 2 hours.
  10. When kheer colour turn creamish add comelle / condensed milk or sugar. You can add evaporated milk too.
