Shukto (Bengali: শুক্তো) is a popular vegetable dish in Bengali cuisine usually served with rice in the West Bengal state of India and in the neighbouring country Bangladesh.

  1. Make ready 2 small uchche/ Bitter Gourd
  2. Take 2 small Baigun /Brinjal
  3. Prepare 1 kancha kola/Raw Banana

  6. Prepare 2 Danta / Drum sticks
  7. Take 1 Mooli/ White Radish

  16. Get 1 tbsp sugar
  17. Get to taste Salt
  18. Take 4 tbsp Mustard oil
  19. Get 1 tbsp ghee
  20. Make ready 1 cup Milk
  21. Make ready 3 cups water
  22. Make ready 2 nos red chilli
  23. Get 2 nos green chilli

Pritha explains, "Shukto is not really the name of a single dish. It is essentially a style and method of cooking a starter which is a jewel in the crown of Bengali cuisine. Shukto is a traditional bangali recipe. Shukto is made of many vegetables.

Instructions to make Shukto:
  1. Soak both mustard seeds and puppy seeds in water for ten minutes then make paste. All vegetables cut in rectangular strips, drumsticks into 2" long strips after peeling the outer skin of each veggies except Brinjal, heat mustard oil in a wok and fry Bitter Gourd and keep aside,
  2. Then fry Bori in medium flame keep aside.
  3. Then fry all the veggie one by one keep it side, temper remaining oil with panch phoron, and Radhuni, red green chilli, add ginger paste and cook for 2 minutes, then add puppy seed and mustard seed paste and cook again for 2 minutes.
  4. Add turmeric powder, salt to taste, sugar again cook for 2 minutes, add all the fried vegetables and bori.
  5. Now add milk, water to the veggie, mix it and bring it to boil then cover the wok with a lid, cook for 10 minutes in low flame,
  6. Check the water level and if required add some more water since Shukto should have sufficient gravy. Add ghee to the curry and boil for 2 minutes and serve hot with rice.

It is a very very popular Bengali cuisine. The fried lentil dumplings or bori is another delightful part of Shukto which adds a nice bite to the dish. I remember as a child I used to Shukto Shukto is a mix of vegetables with an emphasis to the bitterness, a preparation where instead of hiding the bitterness , it is the taste around which the dish evolves. Shukto is a traditional Bengali cuisine of mixed vegetables cooked in a light milk and mustard based gravy. This dish is a blend of flavours. 'Bitter Gourd' and 'Radhuni' are the main flavouring of this recipe.
